Mango Rasayana (Paayasam/Milkshake)


A yummy mango recipe that will make your taste buds dance with joy!!

Mango Rasayana is traditional Udupi recipe made with ripe mangoes, coconut milk and jaggery. The mango season is here and do you have a better excuse to try this recipe. 

Make sure you use ripe and juicy mangoes for this recipe. It is absolutely fine if you use the ones that are slightly sweet and sour as it will give this dish a better flavour. Traditionally, the seed of the mango is also added to this dish with some flesh, but it is purely optional.





Ingredients


2 ripe and juicy mangoes
2 cups fresh coconut milk
2 tablespoons jaggery powder
A Pinch of Cardamom powder

Method :

Remove the peel of of the mangoes and squish the mangoes with your hands.




 Add the coconut milk to the mango pulp.




Add 2 tablespoons of water to the jaggery powder, heat the mixture and quickly clean any impurities when the jaggery starts melting (optional step, depending on the type of jaggery you are using). 

Add the jaggery powder/mixture and cardamom powder to the mango coconut milk mixture. Mix well and served chilled or at room temperature.

Cheese and Corn Sandwich



Makes 4 sandwiches

Time taken : 30 minutes

Ingredients:

Whole wheat bread slices - 8
Cheese slice - 1
Corn kernels  - 1/4 cup (cooked)
Corn flour - 2 tsp

Milk - 1/4 cup
Onions - 2 tbsp (finely chopped)
Dried mixed herbs - 1 tsp
2 tsp Butter or ghee


Method:


1. Heat butter/ghee in a non-stick pan. 
2. When the butter starts to melt, add onions and fry till translucent.












3. Add boiled corn to the onions.












4. Take cornflour and mix it thoroughly with milk.
5. Add the cornflour mixture to the pan.












6. Keep stirring till it begins to thicken.
7. Add the cheese slice or grated cheese.












8. Mix thoroughly till cheese melts.
9. Add salt, dried mixed herbs and switch off gas.












10. Toast the whole wheat bread slices with oil/butter/ghee.
11. Spread the filling on one side and cover with another slice of bread.


Note :

1. The filling should not be too runny. 
2. As cheese already has salt, be careful with the amount of salt you add.
